Ingredients

2 Tbsp Seeni Sambol

4 Slices of bread, ideally sourdough

60g grated cheddar cheese

1 tbsp butter, for spreading
Directions
Prepare the Bread: For best tasting Seeni Sambol Grilled Cheese Sanwich, choose sourdough bread. Butter one side of each slice of bread.
Spread the Sambol: Divide the Seeni Sambol between two slices of bread and spread it on the unbuttered side.
Add the Cheese: Grate the cheddar cheese and evenly pile it on top of the Seeni Sambol.
Assemble the Sandwich: Cover with the second slice of bread, buttered-side up.
Heat the Pan: Heat your frying pan to medium, making sure it's not too hot.
Cook the Sandwiches: Using a flat spatula, lay the two sandwiches into the hot pan. Gently press the sandwich with the spatula so the slices stick together when the cheese melts. The cheese might leak a little, but you can scoop it up and it will add a nice, crispy edge to your sandwich.
Grill the Sandwiches: Cook for a few minutes on one side, pressing occasionally, then flip it over and repeat on the other side.
